Skillet Breakfast Casserole

1/2 lb ground pork sausage

2 cups frozen hashbrowns

4 large eggs

3/4 cup cheese

1 Green onion

crushed red pepper

Preheat oven to 350 degrees

Mix hashbrowns and eggs together and poor into well greased skillet.

Break up the pork sausage to make a layer of sausage that sparsely covers the hashbrowns and eggs.

Now make a layer with the cheese

Top with chopped green onion and red pepper to taste.

Put in the over for about 25 mins. checking regularly.  Soon as it's golden on top remove from the oven and let cool. Then serve like a pie.

Spinach Dip Grilled Cheese

Grilled Cheese:

French bread

Smoked provolone

Spinach chip dip

Tomato soup:

1 can soup

Single serving milk

Basil (optional)

Then you just make it the way you would any grilled cheese. Throw it in a cast iron skillet till its golden brown, then flip and do the same to the other side.

In the photo there is a small cup of tomato soup. It's just a plain old tomato soup that comes in a can for 59 cents. Mixed with some milk and topped with basil.

This is a delicious and easy meal and fed us for several meals.
